Hello, friends! Last week Harry (the hubs) and I returned from yet another wonderful family reunion. Each year, my dad’s side of the family gets together in a different location and this year we stayed near Jackson, Wyoming. It was stinkin’ amazing! I love hanging out with my family and really love when we get to do it in an awesome location.
It’s hard to pick, but I think my top three memories from the trip were: - The Tetons (I could stare at them all day). - Downhill mountain biking (so scary, so addicting). - Seeing a grizzly bear while hiking (albeit it was about ½ mile away).
The Jackson area in Wyoming is an incredible place, and I can’t wait to go back!
After vacation and entirely too much time spent traveling in the car, my body craves simple, healthy, homemade food. One of my favorite quick and nutritious breakfasts is chia seed pudding.
I have to admit, the initial thought of eating chia seeds weirded me out. Yes, they are same seeds you used for your beloved chia pet back in the day! It turns out that chia seeds can be used for more than mild entertainment. They are chock full of good-for-you things like omega-3’s, calcium, and fiber, just to name a few! When the chia seeds are combined with liquid, a gel forms around the seed. This is what creates that "pudding" texture.
Wellness Mama has some great information on chia seeds and how to use them in multiple ways. I’ve used them as an egg substitute, in kombucha, and in this delicious coconut chia pudding which I’ll share with you now.
This is a super simple and healthy dish that can be enjoyed anytime of the day. I prefer it for breakfast and love adding fruit (pictured here), but you can add nuts, cacao nibs, coconut flakes, or whatever floats your boat!
You’ll need: ¼ c. chia seeds 1 c. unsweetened coconut milk beverage 1 tsp. sweetener (I use agave nectar) Toppings of your choice
Directions: Combine coconut milk, chia seeds, and sweetener into a pint-sized mason jar with lid. Close the lid and shake vigorously. Place in the fridge overnight. The following morning, pour into a bowl and top with preferred toppings, or just eat right out of the mason jar! Enjoy.
