Is it still a muffin if you put frosting on it? Or have we crossed over into cupcake-land? Unknown. However, since muffins don’t normally have frosting, we’ll call these suckers “muffin cakes”. As the ever optimistic Bob Ross would say, these tasty treats are a happy accident. I love zucchini bread, and I love carrot cake - and combining them into this (kinda) healthy recipe really worked. The “kinda” healthy part is the addition of whole wheat flour, coconut sugar, and veggies. Go on and have two or three of these muffin cakes! It’s basically like eating a salad (with frosting on top).
For the cake - 1 c. whole wheat flour 1 c. all purpose flour 1 tsp baking powder ½ tsp baking soda ½ tsp salt 1 tsp ground cinnamon ½ c. brown sugar ½ c. coconut sugar ¼ c. canola oil ¼ c. water 1 large egg, beaten 1 tsp vanilla extract 1 c. grated zucchini (about 1 medium zucchini) 1 c. grated carrots (about two medium carrots)
For the frosting - 4 tbs butter 4 tbs cream cheese 4 tbs 2% greek yogurt 1 ½ c. powdered sugar ½ tsp vanilla extract ½ tsp cinnamon
Preheat oven to 370 degrees. Grease muffin tin or use muffin tin liners.
Combine flours in a large bowl, then add the remaining dry ingredients: baking powder, baking soda, salt, cinnamon.
In a medium bowl, combine brown sugar and coconut sugar. To this bowl add the oil, egg, water, and vanilla extract and stir to combine. Add in the grated veggies and lightly mix until just incorporated.
Create a well in the dry mix, and add the wet ingredients. Stir until just incorporated. If the mix looks too dry (it should be a thick, barely wet batter), add a little warm water one tablespoon at a time.
Divide the batter evenly between muffin cups. Bake for 18 minutes. Cool for a few minutes in the tin, then remove to a cooling rack. While the muffin cakes cool, prepare the frosting.
In a mixing bowl, whip together butter, cream cheese, and greek yogurt until smooth. Add the sugar, vanilla extract, and cinnamon and whip. Add more sugar as needed to taste.
Once the muffin-cakes are completely cooled, frost and enjoy!
Makes about 15 cakes.
